Delicious Recipes To Help You March Right Into Spring From PCHSearch&Win!
SPRINGTIME IS ALMOST HERE! Yes fans, even though here at PCH headquarters there’s still a chill in the air (as I am writing this there is snow on the ground), we’re only a few weeks away from warmer temperatures (hopefully) and the sunny days that lie ahead. Aside from the weather, the other thing that Spring makes me most excited about is the switch from heavy comfort foods to lighter meals!
Think about the past few months that, if you’re like me, have been filled with chili, soup, stews, slow cooker meals and other cozy and filling meals. That’s winter cuisine at its best! While all of those meals are mouthwatering and delicious, I am really looking forward to some lighter foods and some different flavors! So, while I am not ready to make the switch to summer pasta salads and warm weather food, I was in the mood over the past few weeks to start changing up my normal meal routine. That’s when I got the idea to try a recipe I hadn’t made in years. All I needed was a little reminder of some of the ingredients, so I hopped onto PCHSearch&Win and got started!
There’s nothing quite like bringing back an old favorite that you had forgotten about. It also happened to be the perfect “transition” meal from those heavy winter dishes to the light and airy summer ones. The first thing I started with were my turkey cutlets. Seriously PCH fans, I am so bored of making chicken, pasta and beef dishes that I really felt like I needed something different. One of my favorite things about turkey is that even though you may think it’s a winter food, you can really dress it up with any flavor that you’re looking for. I call it my canvas food!
The next step was to flour AND bread the cutlets, then cook them in a pan with some butter for a crispy outside and a nice and airy inside. In just a few minutes my entire house was smelling amazing and I wasn’t even halfway there. Once they were fully cooked, I added my gravy and my slices of mozzarella cheese.
I paired the finished product with some brown rice and some sautéed veggies, and I was ready to go! Not only was this meal delicious, it also was a great option for a quick, but filling meal that didn’t give me the winter blues!
