It’s the 8th day of the new year! How are you feeling today?
It’s chilly down here at the PCH Headquarters, but we’re doing great. We’re busy as usual, making sure we keep everything running smoothly for our fans and counting down the days to our next big winner.
There’s so much winning to look forward to! What are you looking forward to this year? Whatever it is, we want to remind you to make your health and well-being a priority this year. What have you been having for breakfast? I know many of us are very busy in the morning, so here’s a quick and easy recipe to get you out of the door on time!
Avocado Toast – Heathy doesn’t get much easier than this! With some crunch from the toast and cream from the mashed avocado, this makes for a tasty boost in the morning. You can add your favorite herbs and spices to the mashed avocado for a more personalized taste. Avocado is loaded with fiber, potassium, cholesterol-lowering monounsaturated fatty acids and much more.

Chickpea Chicken – It’s important that you have a balanced meal at lunchtime to give you the energy you need to get though the second half of your day. This is an easy recipe that can be cooked all at once on a sheet pan and it only takes about 40 minutes to prep and cook. While the recipe calls for chickpeas and sweet peppers, you can also add in some of your favorite veggies.
Now it’s dinner! I think this might be my favorite meal of the day. After a long day, I love coming home to a great meal and just relaxing. BUT! Some of us have to cook when we get home, so I looked for an easy recipe. And hey, if you cook enough dinner for two days, you can skip cooking the next day! Why not?
Chicken for lunch, so maybe some fish for dinner!
Pan Fried Tilapia – Some people shy away from cooking fish, but I think tilapia may be one of the easiest fishes to cook. Tilapia is a protein powerhouse, loaded with fatty acids and many vitamins and minerals. Feel free to pair this with your favorite sides and eat up!
