It’s me, Dorothy Stevens, the Cook & Food Stylist here at PCH. It’s been awhile since I’ve been on the Blog, but you may remember that I just love Autumn recipes! I mean, there’s nothing better than coming in to a warm, delicious smelling kitchen on a cool fall day. And since there are so many parties coming up — and cupcakes are always a big hit — I figured I’d come back on the Blog today to share a special Coconut Cupcake recipe with you.
What I love most about this recipe is that it’s so light and delicious, it’s perfect for any season. And, it’s so easy — especially with the help of some of my favorite PCH Merchandise: The Flour & Sugar Keepers, Ultra Beater & Microfiber Cleaning Cloths.
Here’s what you’ll need:
2 large eggs
11 tablespoons softened butter
1 teaspoon coconut extract
2/3 cups coconut milk
1 cup sugar
1 1/2 cups flour
1 1/2 teaspoons baking powder
1 cup granulated sugar
1 teaspoon salt
Here’s what you do:
Preheat oven to 350 degrees
Get your muffin pan lined and ready
Whisk butter, sugar and salt until creamy

Whisk in your eggs

Add flour and baking powder and whisk until combined. Put your batter in the cupcake cups and bake for 20 minutes.
Now, you can frost them however you’d like — but here’s a special surprise tip — I like to use PUMPKIN frosting and coconut flakes on top to give my cupcakes a FALL-TASTIC flavor my friends always rave about.
Here’s a quick Pumpkin Frosting Recipe: Mix 1/2 cup peanut butter, 1/2 cup pumpkin puree and a pinch of cinnamon until smooth. After frosting your cupcakes, don’t forget to sprinkle coconut flakes on top!
When the job’s all done, I just use my handy Microfiber Cleaning Cloths to wipe down my prep area. They’re a great way to clean up quick, and I can just throw them right in the wash!
